A Beginner’s Guide to Fresh Herbs

By Clara Bennett

6 min read

Learn how to store, combine, and use everyday herbs to bring brightness to your cooking.

Fresh herbs are the easiest way to make a dish taste vibrant. A handful added at the end can transform the simplest plate.

Treat soft herbs — basil, parsley, coriander, dill — like flowers: trim the stems and keep them in a glass of water. Woody herbs like rosemary and thyme prefer to be wrapped in a damp towel in the fridge.

Add woody herbs early so their flavor can infuse, and soft herbs at the very end so they stay bright and fresh.
